Mongolian Beef Slow Cooker

Ingredients

  • 1 ½ lbs Flank Steak, sliced thinly against the grain

  • ¼ c Cornstarch

  • 1 Tbsp Sesame Oil

  • 3 Garlic Cloves, minced

  • 1 ½ Tsp Fresh Ginger, minced

  • ¼ Tsp Red Pepper Flakes

  • ½ Soy Sauce, low sodium

  • ½ c Chicken Broth

  • ½ c Brown Sugar

  • ½ c Water

  • 1 c Carrots, shredded

  • ½ c Scallions, chopped plus some for garnish, optional

  • 2 Tbsp Sesame Seeds for garnish, optional

Directions

  1. In a gallon zip top baggy add the sliced steak and cornstarch. Close the bag and toss to coat evenly.

  2. Add the steak to the slow cooker (for easier clean up use a slow cooker liner), then the carrots.

  3. In a 10 ounce mason jar, add the sesame oil, garlic, ginger, red pepper flakes, soy sauce, chicken broth, brown sugar and water.  Shake well then pour over beef in a slow cooker and give it a good stir.

  4. Cover and cook on low for 5-6 hours.

  5. Once done, add the scallions and give it a stir.

  6. Serve over hot cooked rice and/or steamed/roasted broccoli.

  7. Garnish with scallions and/or seame seeds.
