Irish Soda Bread
I love this recipe, it’s my Mom’s recipe and she would make it every year that my Dad would make his corned beef and cabbage.
Irish Soda Bread
Ingredients
3 c Flour, plus 1-2 Tbsp
4 Tsp Baking Powder
½ Tsp Salt
¾ c Sugar
⅓ c Shortening (Crisco)
⅔ c Raisins
1 Tbsp Caraway Seeds (crushed)
2 Eggs, beaten
1 c Sour Cream
½ c Buttermilk
Directions
Preheat the Oven to 350F
In a large bowl, sift 3 cups of flour, baking powder, salt and sugar. Then add in the caraway seeds.
Add in the shortening and cut into the flour with a pastry cutter.
Gently fold in the raisins, beaten eggs, sour cream and buttermilk. Mix together until it forms a ball (it will be alittle sticky).
Place 1-2 tbsp flour on the counter and shape the dough into a mound and place into a greased cast iron skillet (or 9 inch square or round pan, cookie sheet).
Cut a criss cross in the center of the dough about 1-inch deep, this will help with even cooking.
Bake for 45 minutes or until firm and slightly browned or with an instant-read thermometer inserted and reads 200ºF
Brush the warm bread with melted butter and sprinkle sugar on top.
Cool for at least an hour before serving. You can serve slightly warm or completely cooled.
